Mashed potato pancakes with herbs

Thin potato pancakes belong to Ukrainian cuisine, most often they are served with sour cream or melted butter with herbs.

In order to make thin potato pancakes, you will need the following ingredients:

  • Potatoes (large) - 4 - 5 pieces,
  • Milk - 250 ml,
  • Eggs - 2 pieces,
  • Water for boiling potatoes
  • Wheat flour - 300 grams,
  • Sugar - 1 teaspoon,
  • Baking soda on the tip of a knife
  • Vegetable oil - 5 tbsp. spoons
  • Salt - 1 teaspoon,
  • Fresh herbs (dill and parsley) - 0.5 bunch,
  • Sour cream.

The preparation of thin potato pancakes begins with boiling potatoes for mashing. First you need to peel and then cut it into small pieces (so that it cooks faster). We wash the potatoes and transfer them to a deep saucepan and pour hot water, add salt and put on fire. Boil potatoes until fully cooked.

Then the finished potatoes need to be crushed with a mixer or blender, or with a regular pestle. At the same time, do not drain the water in which the potatoes were boiled. Potatoes need to be crushed hot, then left to cool.

Then you need to add warm milk to the cooled potato mass, mix everything with a whisk.

In a separate bowl, beat the eggs into a homogeneous air mass and then send them to the potato-milk mass, mix.

In a separate bowl, mix the sifted flour, granulated sugar, salt and baking soda. Then the resulting mass is added to the potato-milk mass. We mix.

Add vegetable oil and mix again.

In the classic recipe for potato pancakes, 2-3 cloves of garlic, passed through a garlic press, are also added to the dough. But I refused this, because I was afraid that the garlic might burn during the frying process, since these pancakes are very tender and in order for them not to tear during the turning process, they must be carefully fried.

Fresh herbs should be washed, dried and chopped finely.

In advance, you need to put the pan on the fire to warm up. I have an old cast iron skillet that I trust, and the rare pancake doesn't work on it. Then grease the pan with vegetable oil and start baking potato pancakes. Pour the required amount of dough into the pan and immediately sprinkle the pancake with chopped herbs. Fry the mashed potato pancake properly, then flip to the other side and fry again. Be careful, the pancake may tear while flipping, as it turns out to be very tender. It is best to use a wide spatula for flipping, thanks to which you can easily turn the pancakes while frying.

Ready potato pancakes, if desired, grease with melted butter and serve with sour cream, which can be mixed with chopped herbs and garlic.

Such unsweetened pancakes can be prepared with a variety of fillings, for example, caviar, red fish, stewed cabbage or mushrooms.

The other day my family asked me to cook potato pancakes for dinner. I absolutely agreed, but looked at the potatoes left at home and changed my mind: five medium tubers are not enough for four people, and if the cat also begs for its portion, then even more so. While I was struggling with laziness to go to the store, a friend called. After writing down the recipe, I immediately started cooking. To be honest, I doubted the result a little, but, as it turned out later, in vain.
